Cheese fondue originated in Switzerland in the 18th century as a way to use up leftover pieces of cheese and bread during the winter, when fresh produce was less available. The dish was prepared by melting cheese with the addition of white wine and sometimes garlic, which was then dipped into pieces of bread using special long forks.
